Old-Style Taiwanese Egg Cakes

petits gâteaux à l'œuf de Taïwan

Taiwanese egg cakes that are easy to make at home — this batch makes about 10–12. Resting the batter in the fridge gives a finer texture, with a crisp outside and a soft, fluffy inside.

Philia's tips

  • Resting the batter in the fridge is the key to a finer texture.
  • With a flip-over mould, close and flip it as soon as the batter goes in, so the cakes are round on both sides.

Storing & reheating

  • They are crispest straight away. If you don't eat them all, it's normal for the outside to go soft as they cool.
  • Warm them briefly in the oven before eating and they'll be crisp again!
