Philia's tips
Lard gives the most traditional flavour; butter gives a milky one. The secret to a runny filling is enough fat — about 1 part fat to 2 parts sesame powder.
The harder the filling is frozen, the easier it is to wrap without falling apart or sticking to your fingers.
Kneading the cooked piece back into the dough is what stops the tangyuan from splitting.
Storing & reheating
Freezing: if you're not cooking them right away, line them up on a plate with baking paper and freeze. Once hard, seal them in a freezer bag.
Cook them straight from frozen — no need to thaw, just drop them into boiling water.
